Instead of using standard, or even lower quality green tea, to make hojicha, Ujien uses premium Karigane tea. Karigane is a blend of tea using the twigs and stems of the highest quality sencha or gyokuro tea. This unique tea from Kyoto imparts a rich, yet delicate flavor.
In addition to using such a high-grade tea, Ujien's roasting process is also unique. Rather than using a drum roaster, Ujien lightly and slowly roasts the tea using infrared rays. Keeping the tea carefully at a low heat for an extended time allows the core of the tea to be roasted, resulting in a light and fragrant flavor, and a reddish, golden color.Â
